Today was reat- I’m not sure what my favorite part was: the bread baked in the ground, slathered in Icelandic butter, the sights we saw at Thingvellir, or Kerid crater. Could they tie for all three maybe?

Thingvellir was incredible, even with some gnarly weather! It was snowing so much that visibility was very limited. Olof shared alot about Icelandic history, and some Game of Thrones facts! I think seeing such an iconic part of Iceland in such nasty weather really gave us a real, raw experience- I loved it.

Then there was the bakery. Wow! Flavio, the man who made our bread, was fantastic and gave us a thorough walkthrough. They make the bread dough, place it in a bread pot (all of them are named- ours was Marketta!), wrap it tightly and thoroughly with plastic wrap, then bury it beside the hot spring and leave it to bake for 24 hours. Sometimes they are over or under-baked- but ours was perfect today, very sweet and moist. The picture below includes the bread and the recipe card!

Then, we ended our day at Kerid Crater with some sunshine! The sheer size of it was incredible, with the sun and the mountains all around- I cannot imagine a better way to have finished such an exciting day. It was slippery, though- when packing, remember crampons are much needed!
