Our day began at Þingvellir National Park, one of the most remarkable natural and historical places in the country. Walking through the park, it was incredible to see the dramatic rift valley formed where the North American Plate and Eurasian Plate slowly pull apart. The cliffs, clear water, and lava rock landscape made it feel both powerful and peaceful. Standing there really gave a sense of how geology shapes Iceland’s environment and culture here in Iceland

After exploring the park, we stopped at a small local farm stand that sold fresh ice cream. The best part was that the cows producing the milk were right there in the buildings. Watching them go on about their life while sitting int there having the delicious ice cream was a cool experience that I wasn’t expecting to have.

Later in the day we grabbed classic Icelandic hot dogs at an N1 gas station. The hot dogs were simple but delicious and perfect for a quick little meal to get as soon as we got to the hotel for the night.

To finish the day, we sat down at a small local restaurant and ordered pizza. After a full day of exploring nature and trying different foods along the way, it was a relaxing way to end the evening and reflect on everything we had seen.
