It seems everyday in Iceland is better than the last.
Today’s journey took us to three incredible places: a tomato greenhouse, a massive waterfall, and a geothermal area with geysers (or geysir, as the Icelandic say)!
The tomato greenhouse was huge- full of bees and tomatoes ranging from green to ruby red. The owner, Knútur, showed us the facilities from the grow greenhouses to the packing room to the restaurant, explaining the process as he went. The tomato plants are grown in a very specific way for about 8-9 months, growing to be about 8-9 meters as they go (which means they grow about a meter a month!). Every detail counts- the ideal number of leaves (18), the amount of sunlight they get, the number of bees in the environment to pollinate their little yellow flowers: Knútur literally has it down to a science. We finished our tour with a lunch of tomato soup and homemade bread- it was my favorite meal so far. And if I’m being honest, I don’t even really enjoy tomatoes back home!


Then we went to Gullfoss. I don’t have words. It was incredibly windy and the most beautiful thing I’ve ever seen. Lots of photos below, though they don’t do it justice!



Our final stop of the day was the geothermal sight with geysers. Very cool- Ólöf led us straight to the “splash zone” and we immediately saw it erupt. The large one that went off was impressive, but so were the smaller springs all around. This was my first time seeing anything like it.

Today has been my favorite day; I can’t wait for tomorrow to try to top it!
