I really enjoyed getting to tour the Salcheto sustainable farm and winery today! I think the thing that I will remember most is how much care they put into making sure that nothing goes to waste. With being a sustainable farm they try to cut down on energy costs as much as possible by using natural light, and cooling the building by keeping most of the levels underground, but what I find even more interesting is the little things you wouldn’t really think about. For example, they reuse all of the wood from their old barrels to make glasses frames. Another thing I noticed is that our water glasses for the wine tasting were made from recycled wine bottles and our placemats and napkins were made of recycled paper. I find their commitment to sustainability admirable not just for the big things but especially for the small ones too.
